Friends, Wine & Sheri's Popcorn


Where friends connect and enjoy the simple things in life.

Sometimes it is the simple things that become our treasured memories. One of these is friendships, whether these are friends I have had from childhood, or new friends that I have met throughout my yoga journey. There is one thing that they have in common. They hold a special place in my heart.


Friends bring new experiences and memories into our lives. These do not always have to be complicated or challenging, in fact if this is a true friendship it is simply nice to be around this person and not have to be someone your not. I have wonderful friends, but in truth my closest of these are few. I know this because true friends have these qualities; they are easy to talk to, forgive you when your forget to call, love and accept everything about you ...... even the things that your wish other people didn't know about you.


I was sitting at home tonight, watching Will & Grace, updating my website and sipping a glass of white wine. Izzy my golden-doodle is laying on the couch beside me waiting for me to finally go to bed and I get the late night munchies. I begin craving my yoga friend Sheri's popcorn!


While in Nelson in recent years I was introduced to a new snack. Popcorn! I know this sounds silly, but I did not grow up eating popcorn, I was born in England and my family did not eat corn. In the Uk when I was a child, corn was fed to cows and not people! I did not enjoy popcorn for many years; it was the texture ,the weird smell from microwaved popcorn and, the movie popcorn was always tasted really awful to me. I am now 49 years old and enjoying popcorn for the first time in my life.


It might be the whole experience; the laughter, feeling connection, and absorbing ourselves into the study of yoga. Or it could of been because we are all away from our everyday lives at a beautiful retreat, eating healthy delicious food, and sipping a glass of wine. Whatever the reason, it was this feeling of being around like minded women... this tribe of amazing women that I treasure and look forward to each year. Yes that and my friend Sheri's POPCORN!


I just had to share this simple and delicious popcorn that Sheri makes. I hope you enjoy it as much as I do! A big thank you to Sheri for your wonderful strength and friendship and introducing me to this new appreciation of popcorn!


"Nutritional yeast is a great addition to popcorn whether you’re vegan or not; it imparts a fabulous cheesy, nutty flavour and is a great source of protein." (Food & Wine)



"My Friend" Popcorn by Sheri


Ingredients: All these ingredients can be found at your local grocery store.


1/2 C Organic popcorn kernels.

2-3 Tbsp Coconut Oil

Sea Salt

Braggs Liquid Aminos ( In spray bottle)

Braggs 1/4 C Nutritional Yeast


Directions:

Makes enough for: 1-2 people or three grand-daughters!


In a medium sized pot bring add 2tbsp of coconut oil and organic popcorn kernels. to coat the bottom of the pot with oil and kernels. Cover your pot with a tight lid, heat pot on medium/high heat and wait for oil to begin to sizzle. Shake the pot every so often and wait for the kernels to begin to pop. Keep gently shaking and turn down the heat to low, waiting for the last kernels to pop.


* If you are looking for lower fat version use your air popper, and cut coconut oils in half.


Now stir in the last tbsp on coconut oil while popcorn is still hot in the pot, spray with brags sauce and sprinkle generously with nutritional yeast. Stir or shake popcorn, repeat. This way you can coat each popcorn piece with deliciousness!


Transfer into a large bowl. Remember to add to little bits in bottom of pan which will become crunchy and really yummy on the popcorn. Enjoy with a great glass of wine and a few wonderful friends!
